Cinnamon Raisin Walnut Bread

Ingredients

For the bread

  • 455 g white bread flour
  • 20 g granulated sugar
  • 1 1/4 tsp salt
  • 2 tsp instant yeast
  • 1 1/4 tsp cinnamon
  • 1 large egg
  • 30 g melted butter
  • 120 g buttermilk or whole milk
  • 175 g water
  • 255 g raisins
  • 115 g chopped walnuts

For the cinnamon sugar

  • 1/4 cup sugar
  • 1 tbsp cinnamon

Method

  • Mix together flour, sugar, salt, yeast, and cinnamon
  • Add egg, butter, milk, and water
  • Knead the dough, for the few minutes incorporate all the raisins and walnuts
  • Let rise for ~2 hours
  • Shape into loaf, adding cinnamon sugar swirl
  • Proof ~1.5 hours
  • Bake at 180 C for ~ 50 minutes
  • Remove from tin, brush with melted butter, and sprinkle on cinnamon sugar
