Cinnamon Raisin Walnut Bread
Ingredients
For the bread
- 455 g white bread flour
- 20 g granulated sugar
- 1 1/4 tsp salt
- 2 tsp instant yeast
- 1 1/4 tsp cinnamon
- 1 large egg
- 30 g melted butter
- 120 g buttermilk or whole milk
- 175 g water
- 255 g raisins
- 115 g chopped walnuts
For the cinnamon sugar
- 1/4 cup sugar
- 1 tbsp cinnamon
Method
- Mix together flour, sugar, salt, yeast, and cinnamon
- Add egg, butter, milk, and water
- Knead the dough, for the few minutes incorporate all the raisins and walnuts
- Let rise for ~2 hours
- Shape into loaf, adding cinnamon sugar swirl
- Proof ~1.5 hours
- Bake at 180 C for ~ 50 minutes
- Remove from tin, brush with melted butter, and sprinkle on cinnamon sugar
