Funfetti Cookies
- 300g plain flour
- 1/2 tsp baking powder
- 1 tbsp cornflour
- 115g salted butter (at room temp)
- 200g caster sugar
- 1 egg
- 1 tsp vanilla extract
- 90g white chocolate chips
- 90g Caramac chocolate broken into pieces
- 80g rainbow sprinkles
- mix butter and sugar add egg and vanilla and mix
- stir chocolate and sprinkles in a separate bowl, combine flour, baking powder and cornflour
- Add dry ingredients to wet and mix to form a dough
- 60g balls of dough (approx 16) four on a tray and flatten slightly
- 10-15 mins @160C (fan) on greaseproof paper lined sheets
- bake until edges turning golden
