Funfetti Cookies

  • 300g plain flour
  • 1/2 tsp baking powder
  • 1 tbsp cornflour
  • 115g salted butter (at room temp)
  • 200g caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 90g white chocolate chips
  • 90g Caramac chocolate broken into pieces
  • 80g rainbow sprinkles
  • mix butter and sugar add egg and vanilla and mix
  • stir chocolate and sprinkles in a separate bowl, combine flour, baking powder and cornflour
  • Add dry ingredients to wet and mix to form a dough
  • 60g balls of dough (approx 16) four on a tray and flatten slightly
  • 10-15 mins @160C (fan) on greaseproof paper lined sheets
  • bake until edges turning golden
