Lentil Bolognese
Serves 3
Ingredients
- 1 red onion
- 2 cloves garlic
- 2 carrots
- 1 stick of celery
- 6 cherry tomatoes, halved
- 60 g dried green lentils
- 600 ml vegetable stock
- 1/2 tin of chopped tomato
- 200 g wholemeal spaghetti
- juice 1/4 lemon
- 1 tbspn soy sauce
Method
- Cook green lentils in water
- Finely chop onion, garlic, carrot, celery and saute until soft
- Add all the other ingredients
- Simmer until pasta is cook
