Creamy Tomato Pasta
Ingredients
- 1 onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 aubergine, bite-size pieces
- 150g mushrooms, finely chopped
- 1 tablespoon soy sauce
- 100ml water
- 2 x 400g tins chopped tomatoes
- 100g tomato purée
- 1 tablespoon maple syrup
- 500ml vegetable stock
- 500ml milk
- 500g pasta
- parmesan
Method
- Fry onion and garlic in oil for 2 minutes. Add aubergine and mushrooms, cook 3-4 minutes.
- Add soy sauce, cook until absorbed. Add water, cook 5 minutes.
- Add tomato purée, maple syrup freeze if required
- Add tomatoes, Stir in stock and milk, add pasta. Mix well.
- Simmer until pasta is cooked.
- Add parmesan.
