Pasta Bake
Ingredients
- 400g pasta shells
- 500ml passata
- 500ml vegetable stock
- ½ courgette, diced
- 1 red pepper, diced
- 1 medium red onion, diced
- 1 tsp Italian seasoning
- 90g grated cheddar
- 150g mozzarella, shredded
Method
- Preheat oven 180°C
- Fry courgette, pepper, onion until softened
- In large ovenproof dish, combine pasta shells, sauce, stock, cooked vegetables, Italian seasoning, salt and pepper
- Top with cheeses, cover with lid, bake 35 mins
- Remove lid, bake additional 15 mins until cheese browns
