Salmon Carbonara
Ingredients
- 280g dried spaghetti
- 1 diced courgette
- 1 large garlic clove
- 350g canned red salmon
- 100ml double cream
- 50ml whole milk
- Juice of 1/2 lemon
- 1 tsp grated lemon rind
- 2-3 tbsp chopped chives
Method
- Cook pasta with courgette added near end
- Heat oil, cook garlic 1 minute. Add salmon, cream, milk. Cook 5 minutes.
- Add lemon juice, rind, chives, pepper. Combine with pasta and 4 tbsp cooking water.
