Sweet potato soup

Ingredients

• 750g sweet potato (2 large)
• 2 cloves garlic
• 1 onion
• 1 tin (400ml) coconut milk
• 750-1000ml veg stock

Method

• Fry onion and garlic for a couple minutes
• add sweet potato and cook with lid on for 5
• add liquid and simmer for 15 mins
• blend
